roaster coffee is an art and very few in santa fe have mastered that art. most just burn it, especially the french roast, which is the darkest roast. some roasters in town burn everything; every roast of coffee is burnt.

las chivas creates unique blends and roasts them to perfection. copied by many, equalled by none.

why?

well for one thing, it's not yesterday's coffee mixed with cigarette ashes, chilled overnite, add ice and voila! it's not even the typical take regular coffee and add ice.

no this coffee is cold filtered over a whole day, making it extremely concetrated, but not bitter. in fact, it is the least bitter of any coffee method. then they just add filtered water and ice and you have something that's stronger than regular coffee, but not bitter at all.
